I just cannot check my brain in at the door when I enter discussions like this.
The traditions of men infected the Truth of the scriptures. If you Love me keep my commandments.
So we pretend that Yeshua is our Sabbath and other such nonsense so we do not need to observe it.
We take the discourse on food (and the warnings against pagan sabbaths) to suggest that the people who remind us to keep the Sabbath are wrong.
Sabbath was given before sin entered the word.
Sabbath was inscribed by Yeshua on two tablets of stone.
Sabbath was given in Person to Moses.
We take the RCC's good friday thru Ishtar (easter) and say it was three days and three nights.
We do not read the Tanach and understand the real Passover sequences.
We adhere to other RCC pagan feasts and wrap texts around them.
Nobody 'created' a canon. It is an agreed upon collection of scrolls and texts.
Even Isiah was in dispute before the Qumran scrolls verified it.
Perhaps if we did some reading of history we would not be so easily upset.

There are approximately 7 billion souls on our planet. I would suggest that therefore there are 7 billion plus one ways the scriptures can speak to us. The 'plus one' is what God knows since he is already ahead of us in all things.
The scriptures, or words of God, as some describe them, are 100% suitable for the purpose for which they were/are designed.
The scriptures are dynamic when necessary and have a power way beyond their mere words. Why? Because God can not be contained.
Every single atom in the universe was designed, so every conceivable way the scripture can be understood is also designed.
As you note, some have twisted scriptures to their own ends. Their mistake - but who dare inform them? That is not my job unless I am faced in my immediate circumstances with this and have to say the Truth.
To highlight scripture we have the much maligned prophesy and other spiritual gifts. They again are often used wrongly and in no uncertain terms, they are very dangerous at times. Many an evangelist and healer has gone adrift of his first calling and fallen into error due to pride. The Lord lets them go so far and then they are compelled to cease in one way or another. It is the way things are and the way God is. His attitude toward His children is always flamboyant and wildly loving giving us tremendous leeway. He is very slow to anger and sees us thru the eyes of Christ. He willingly give us good and perfect gifts and never hold us aver a barrel.
We are far quicker to condemn others than the Lord is. We are very quick to point the finger at Job and say, Aha! But the Lord is far more reserved in this manner and thus He often winks at our errors and allows us the freedom to fail if necessary.
Where we might fail is in the area of the DYNAMIC nature of the written scriptural words that can be relied upon to 'bring forth what it has first conceived'. It matters not if the words are misspelled or even come from erroneous transliteration or translation. The Truth as an Absolute Entity will be driven thru those words by the Holy Spirit.
It is line upon line, precept upon precept. Here a little, there a little. Then maybe one day we hear a voice behind us saying, "this is the way walk ye in it". Abram heard God. Sarai did not remember and gave Hagar to her husband... Nevertheless, it was counted as faithfulness to Abram, for then his name was to become Abraham - the father of nations. it was by stages as it is for most of us.
I have heard the scriptures chopped to pieces by pastors that did not really understand what they were reading. So many cessationists hold forth doctrines that would make you cringe. It is amazing the propensity people have for getting totally the wrong and twisted message and then (what might be worse) broadcasting it to others.
