Moreover when ye fast, be not, as the hypocrites, of a sad countenance: for they disfigure their faces, that they may appear unto men to fast. Verily I say unto you, They have their reward. As is the case with giving, what motivates our religious activity? Do we do things to be seen of men and get their admiration and applause, or do we do things to please God and are we willing to wait on our rewards in the next life? Do we have enough faith to know that these rewards are real?
You can impress people by showing that you fast regularly. Most people don't fast at all. If you can manage to push the plate aside for a day, 3 days, perhaps a week or more, that will get the admiration of some people. If we want to be rewarded by God, we will fast in secret, pray in secret and give in secret. Do things to please God, and in a way where it can not benefit you except with God. Know that He shall reward you openly.

What is the purpose of fasting? Is it learning self control, for health benefits, or is there power in it? Jesus did say some devils can't be cast out without prayer and fasting.

I am not certain that there is a single answer to this question, but I do know that there seems to be power in fasting, as there is power in prayer, as Jesus said lack of fasting was one reason the disciples couldn't cast out a demon.
People would fast while seeking God during a crisis or a time of repentance. Daniel fasted while seeking an answer from God and Peter had been fasting when he fell into a trance in Acts. Fasting is thought by many to have health benefits, and it does teach discipline. It is something that men and women were doing going back to Old Testament times and it is something the church continues to practice to this day. How often is up to the individual unless God is calling on someone to fast.

Can the children of the bridechamber fast, while the bridegroom is with them? as long as they have the bridegroom with them, they cannot fast. But the days will come, when the bridegroom shall be taken away from them, and then shall they fast in those days.

This seems to connect fasting with sorrow. While the bridegroom remains, they cannot fast, but when he is taken, they shall fast.
